Being I have to create my meals on the fly and be very creative about it, I've discovered some quaint ways of doing things. Here's an easy recipe for cornbread peach cobbler.

1 - 8.25oz can of Del Monte Peach chuncks in water - 25 cents at Big Lots

1 - box Jiffy corn muffin mix - 37 cents at Target

2 - tablespoons of brown sugar - buy the cheapest you can find it lasts forever

a sprinkle of water

Mix all in a small bowl until the peach chunks are coated in cornbread and the brown sugar is swirled throughout. Pour into a small baking dish (6x6 would be good, I make my own out of aluminum foil) and bake at 400 degrees for 20 minutes in a toaster oven (may take longer depending on how accurate your toaster oven is).

Serves two to four or one very hungry adult.
